  • 2 cups Zucchini, grated
  • 1 cup All-purpose flour
  • 1 large Egg
  • ½ cup Grated Parmesan cheese
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 2 tablespoon Olive oil for frying

Instructions 

  1. 1. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
  2. 2. In a mixing bowl, combine grated zucchini, flour, egg, Parmesan cheese, salt, and black pepper. Mix well.
  3. 3. Heat olive oil in a frying pan over medium heat.
  4. 4. Scoop spoonfuls of the mixture into the pan, flattening them slightly with a spatula. Fry until golden brown on both sides, about 3-4 minutes per side.
  5. 5. Remove fritters from the pan and drain on paper towels. Serve warm.
