- 2 pounds potatoes peeled and sliced
- 1 cup chicken broth
- ½ cup white vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup onion chopped
- 8 slices bacon cooked and crumbled
- 2 tablespoons fresh parsley chopped
1. Boil the potatoes in a large pot until tender, about 15-20 minutes. Drain and set aside.
2. In a skillet, cook the bacon until crispy. Remove and crumble. Set aside.
3. In the same skillet, sauté the onions until translucent. Add the chicken broth, vinegar, sugar, salt, and pepper. Bring to a boil.
4. Pour the hot mixture over the potatoes. Add the crumbled bacon and parsley. Toss gently to combine.
