Ingredients 

Main Ingredients

  • 4 cups Broccoli florets chopped
  • 1 cup Carrots shredded
  • 1 cup Onion diced
  • 4 cups Chicken broth
  • 2 cups Milk
  • 2 cups Cheddar cheese shredded
  • ¼ cup All-purpose flour
  • 4 tablespoons Butter
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. In a large pot, melt butter over medium heat. Add onions and cook until translucent.
  2. Add flour and whisk continuously for about 1 minute to make a roux.
  3. Slowly add chicken broth while whisking to avoid lumps. Bring to a simmer.
  4. Add broccoli and carrots. Simmer until vegetables are tender, about 15 minutes.
  5. Blend the soup until smooth using a blender or an immersion blender.
  6. Return the soup to the pot. Add milk and shredded cheddar cheese. Stir until cheese is melted and soup is creamy.
  7. Season with salt and black pepper to taste. Serve hot.
