Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 2 carrots Carrots chopped
  • 1 stalk Celery chopped
  • 6 cups Vegetable Broth
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste
  • 2 tablespoon Olive Oil

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onions and garlic, sauté until softened.
  3. Add chopped carrots and celery, cook for another 5 minutes.
  4. Add lentils, vegetable broth, cumin, paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 30-35 minutes until lentils are tender.
  6. Adjust seasoning as needed. Serve hot.
