Main Ingredients
- 1 cup Lentils rinsed
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 2 carrots Carrots chopped
- 1 stalk Celery chopped
- 6 cups Vegetable Broth
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 teaspoon Salt to taste
- ½ teaspoon Black Pepper to taste
- 2 tablespoon Olive Oil
Heat olive oil in a large pot over medium heat.
Add chopped onions and garlic, sauté until softened.
Add chopped carrots and celery, cook for another 5 minutes.
Add lentils, vegetable broth, cumin, paprika, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 30-35 minutes until lentils are tender.
Adjust seasoning as needed. Serve hot.
