- 4 ears corn husked
- ¼ cup mayonnaise
- ¼ cup cotija cheese crumbled
- 1 teaspoon chili powder
- 1 tablespoon cilantro chopped
- 1 medium lime cut into wedges
Preheat the grill to medium-high heat.
Brush the corn with a little bit of oil and place on the grill. Cook for about 15 minutes, turning occasionally, until the corn is charred and cooked through.
Remove the corn from the grill and brush each ear with mayonnaise.
Sprinkle the corn with crumbled cotija cheese, chili powder, and chopped cilantro.
Serve with lime wedges on the side.
