Ingredients 

Main Ingredients

  • 1 tablespoon Vegetable oil
  • 1 cup Sliced mushrooms
  • 1 tablespoon Red curry paste
  • 3 cups Chicken broth
  • 1 can Coconut milk
  • 1 tablespoon Fish sauce
  • 1 tablespoon Brown sugar
  • 1 cup Cooked chicken breast, shredded
  • 2 tablespoon Lime juice
  • 1 cup Fresh cilantro, chopped

Instructions 

  1. Heat the vegetable oil in a pot over medium heat.
  2. Add the mushrooms and cook until they start to soften, about 5 minutes.
  3. Stir in the red curry paste and cook for another minute.
  4. Pour in the chicken broth and bring to a boil.
  5. Reduce the heat and add the coconut milk, fish sauce, and brown sugar. Simmer for 10 minutes.
  6. Add the shredded chicken and lime juice. Cook until heated through.
  7. Garnish with fresh cilantro before serving.
